I love fish soup, but I don't love the high carb and gluten content in most recipes. So I created this low carb and gluten free version that is just as delicious as the traditional recipe.
Ingredients:
1 tablespoon olive oil 1 cup chopped onion 1 red bell pepper, chopped 3 cloves garlic, minced 2 cans diced tomatoes (14.5 oz each) 3 cups vegetable broth 1 teaspoon dried oregano 1 teaspoon dried basil 1/2 teaspoon salt 1/4 teaspoon black pepper 2 bay leaves 4 cups chopped fresh spinach leaves 2 pounds cod fillets, cut into 1-inch pieces extra-virgin olive oil for drizzling (optional)
Instructions: Heat the oil in a large saucepan over medium heat. Add the onion, bell pepper, garlic, tomatoes with their juice, broth, oregano, basil, salt, black pepper, and bay leaves. Bring to a simmer and cook for 10 minutes.
Add the spinach and cook for 2 minutes until wilted. Add the cod and cook for 5 minutes until opaque. Remove from the heat and discard the bay leaves.
Ladle into bowls and drizzle with extra-virgin olive oil if desired.

1 tablespoon olive oil 1 large onion, chopped 3 cloves garlic, minced 1 (15-ounce) can diced tomatoes, undrained 2 cups vegetable broth 1 teaspoon dried oregano 1 teaspoon dried basil ½ teaspoon salt ¼ teaspoon black pepper 4 cups water 2 (14.5-ounce) cans no-salt-added diced tomatoes, undrained 1 (6-ounce) can no-salt-added tomato paste 3 cups loosely packed fresh spinach leaves 2 pounds cod fillets, cut into bite-sized pieces Fresh parsley leaves for garnish (optional) Directions:
Heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the diced tomatoes with their juice, vegetable broth, oregano, basil, salt and pepper. Bring to a simmer and cook for 10 minutes. Meanwhile, heat 4 cups water in a large pot over medium heat. Add the canned tomatoes with their juice, tomato paste and spinach leaves. Bring to a simmer and cook for 5 minutes. Add the cod to the soup pot and gently simmer until cooked through, about 5 minutes. Divide the soup among 4 bowls and ladle a little of the cod mixture into each bowl. Sprinkle with fresh parsley leaves if desired
