Ingredients:

  • 1 tbsp olive oil
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 1 red pepper, diced
  • 2 cans of tomatoes (29 oz each)
  • 2 cups of water
  • 1 tsp sugar
  • 1 tbsp dried basil leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 lbs fish fillets (I used cod)
  • Fresh parsley leaves for garnish

Heat the oil in a large saucepan over medium heat. Add the onions, garlic, and red pepper, and cook until the vegetables are tender, stirring occasionally. Add the tomatoes, water, sugar, basil, salt and pepper. Bring to a boil. Reduce the heat to low and simmer for 30 minutes.

Add the fish to the soup and simmer for 10 minutes or until the fish is cooked through. Garnish with fresh parsley leaves before serving.
