A delicious and healthy soup for those cold winter days!

This soup is easy to make and it's delicious!

Ingredients:

  • 2 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup uncooked farro
  • 1 large carrot, chopped
  • 1 stalk celery, chopped
  • 1/4 Onion, chopped
  • 1 clove garlic, minced
  • Pinch of salt
  • Pepper to taste

Instructions:

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Add the chickpeas, farro, carrot, celery, onion, garlic, salt and pepper.
  3. Reduce heat and simmer for 20 minutes or until the farro is cooked through.
  4. Serve hot.

1 tablespoon olive oil 1 onion, diced 3 cloves garlic, minced 2 boneless, skinless chicken breasts, cut into small cubes 3 cups chicken broth 1 teaspoon dried thyme leaves 1/2 teaspoon salt 1/4 teaspoon black pepper 1 (16-ounce) package frozen mixed vegetables, thawed 1 (10.75-ounce) can condensed cream of chicken soup 3/4 cup all-purpose flour 2 tablespoons cold butter 1 cup milk 2 cups frozen dumplings Instructions: 1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the chicken and cook until browned, about 5 minutes more. Pour in the chicken broth and bring to a simmer. Add the thyme, salt, and pepper and stir in the mixed vegetables. Simmer for 10 minutes. In a small bowl, whisk together the cream of chicken soup and flour until smooth. Stir into the pot and continue to cook for 10 minutes more.

2. Meanwhile, melt the butter in another small pot over low heat. Stir in the milk and bring just to a simmer. Add the dumplings and cook until tender and cooked through, about 10 minutes. Serve bowls of the soup topped with some of the dumplings.
