A Delicious and Nutritious Soup Recipe

Soup is a great meal to make when you're short on time or ingredients. This recipe is flavorful and nutritious, perfect for a busy day.

Ingredients:

-1 onion, chopped

-1 green bell pepper, chopped

-3 cloves garlic, minced

-1 tablespoon olive oil

-2 cans black beans, drained and rinsed

-2 cups chicken broth

-1 (14.5 ounce) can diced tomatoes with green chilies, undrained

-1 teaspoon chili powder

-1 teaspoon cumin powder In a large pot or Dutch oven, heat the oil over medium heat. Add the onion, bell pepper and garlic, and cook until the vegetables are tender. Stir in the black beans, chicken broth, diced tomatoes with green chilies, chili powder and cumin powder. Bring to a boil over high heat then reduce the heat to low and simmer for about 15 minutes.   • Heat olive oil in a large saucepan over medium heat. Add chopped onion, bell pepper, and garlic; cook until vegetables are tender.

  • Add undrained diced tomatoes, tomato paste, water, basil leaves, oregano leaves, salt and black pepper to the saucepan; stir well.
  • Bring mixture to a boil; add pasta shells or elbow macaroni. Cook for 8 to 10 minutes or until pasta is tender. SEE NOTE BELOW ABOUT PASTA COOK TIME

  • Stir in frozen green peas; cook for 2 minutes more or until heated through. Add cod fillets and cook for 3 to 5 minutes more or until fish is cooked through. Remove from heat; stir in Parmesan cheese. Serve immediately.

In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes. 2. Add the fish fillets, tomatoes, vegetable broth, bay leaf, thyme, smoked paprika, cayenne pepper, salt and black pepper to taste. Bring to a boil over high heat. Reduce heat to low and simmer until the fish is cooked through, about 10 minutes. Discard the bay leaf. 3. If desired, puree the soup with an immersion blender or in batches in a regular blender until smooth. Return it to the pot. Stir in the heavy cream and heat through but do not boil. Garnish with fresh parsley if desired before serving.
