This soup is a family favourite in our house! Not only is it healthy, but it's also delicious and comforting.

Ingredients:

  • 1 kg of fish (any type will do)
  • 1 onion
  • 3 cloves of garlic
  • 2 cans of crushed tomatoes
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. Start by heating some olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
  2. Add the fish and cook for a few minutes until opaque.
  3. Pour in the crushed tomatoes, thyme, bay leaf, and salt and pepper to taste. Bring to a boil then reduce heat to low and simmer for 30 minutes.
  4. Serve hot with some fresh bread on the side. Enjoy!
